With the garlic harvest underway, attention turns to sowing a final round of carrots, particularly Nantes varieties, in the same beds where garlic was previously grown. Using straw mulch left from the garlic crop can further benefit carrot growth, enabling harvests to extend through December.

Late summer also presents opportunities for planting other crops to follow summer produce. Gardeners are advised to sow bush beans in areas where summer lettuce is declining and consider short-stature fall peas, which mature earlier than taller variants. For cooler-weather crops like broccoli, cauliflower, kale, and cabbage, early seedling transplants should ideally be introduced to soon-to-be-vacated garden spaces.

Spinach plantings are best started in late August or early September to account for shorter daylight hours, with growers advised to add additional days to typical maturation timelines on seed packets.

Central to this extended growing strategy is the use of permanent raised beds, though not constructed from wood or metal but formed by carefully shoveling soil into narrow, gently elevated strips about 30 inches wide and four to six inches high. The paths between beds are dug out to about 18 inches wide. This layout facilitates hand tending from both sides of each bed without stepping onto the soil, preserving its structure. Crop spacing follows precise measurements, tailored to each vegetable, which supports a bio-intensive growing method that prioritizes higher density and yields.

Soil management emphasizes minimal disturbance, employing tools like a broadfork that aerate without turning the soil and a stirrup hoe to cultivate weeds by cutting roots near the surface while loosening the soil. This approach avoids traditional tillage, promoting soil health and structure.

Incorporating green manure or cover crops is another key aspect of maintaining soil fertility. These crops—grown not for harvest but to enrich the soil—are ideally planted during summer. A common mixture includes field peas and oats, which can be broadcast and lightly raked into the soil without tilling. After their growth period, the cover crops are cut, lightly decomposed under soil and tarps to foster microbial activity, and eventually broken down into organic matter that enhances soil quality.

By applying these techniques—timely succession planting, precise bed management, minimal soil disturbance, and green manure integration—organic farmers can effectively extend their growing season and sustain healthy soil for future cycles, ensuring a continuous supply of fresh vegetables well into cooler months.
