Since its inception in 2018, Beta, a Kuala Lumpur-based restaurant led by chef Raymond Tham, has continued to advance the evolution of modern Malaysian cuisine. Building on a movement initiated in 2015 by chef Darren Teoh with his pioneering establishment Dewakan, Beta has emerged as a prominent player in Malaysia’s progressive culinary scene, earning a Michelin star in 2023, a year after the Michelin Guide launched in Kuala Lumpur and Penang.

Tham’s approach at Beta remains focused on celebrating Malaysia’s diverse cultural heritage through local ingredients and stories. The restaurant integrates elements such as Malaysian-made clay crockery and watercolor art by local artists to create an immersive dining experience that highlights the country’s rich traditions. Tham explained that storytelling is a central aspect of the restaurant’s philosophy, particularly for its international clientele, presenting Malaysian cuisine as a vibrant narrative.

The signature “Tour of Malaysia” tasting menu, priced at RM630++ per person, guides diners through the culinary landscapes of Malaysia’s northern, eastern (including Sabah and Sarawak), central, and southern regions. An optional alcoholic beverage pairing is also available at RM330++ per person, featuring cocktails, wine, and champagne.

The meal begins with a trio of northern-inspired snacks served on a kandar pole, evoking traditional street food culture. Highlights include a bite-sized dish combining squid, mackerel, laksa, and kesum leaves, praised for capturing the fresh and herbaceous character of laksa. Another notable appetizer is Beta’s reinterpretation of peknga, a Kedah coconut pancake, here fashioned in the style of an English crumpet and filled with salted fish, sambal, and belimbing buluh. The yeast-free bread course reflects historical wartime hardship during the Japanese occupation in the 1940s when rationing led locals to rely on tapioca. This course, inspired by Tham’s grandmother, features a chewy, subtly sweet bread complemented by a red chili emulsion.

The menu then transitions to eastern Malaysian influences, such as grilled prawn marinated in fermented rice lees with pickled carrot, chayote, young papaya, and daun kaduk, creating complex textural and flavor layers. A standout beef dish highlights masak hitam sauce balanced by pickled vegetables, demonstrating skillful harmonization of robust flavors.

Among the main courses, the dry-aged Penang Cherry Valley duck exemplifies Beta’s dedication to refining local ingredients. The duck, aged for 14 days and grilled to achieve crispy skin and tender, pink flesh, is paired with pickled mustard greens and a sauce made from wild pepper leaves and tomato, offering a flavorful and nuanced combination.

An optional supplemental dish, Abalone Heirloom Rice (RM99), features heirloom rice cooked with abalone, local caviar, and kaffir lime, delivering a rich and comforting rice-based dish that highlights the quality of the seafood.

Dessert presents a modern take on traditional flavors with Teh Tarik ice cream made from Cameron Highlands tea, paired with a dhal cake and gula Melaka syrup, a palm sugar sweetener. Although the dhal cake plays a subtle role, the ice cream and syrup work together to deliver a distinctive finishing note anchored in Malaysian heritage.

The beverage pairings include refined options such as Perrier Jouet Grand Brut NV champagne, appreciated for its celebratory effervescence, as well as house-crafted cocktails like the Paddy Terroir, which blends homemade rice wine, coconut liqueur, lime, and egg white, complementing the tropical and local nuances of the dishes.
