The beetroot was paired with ewe’s curd and chives, though the combination resulted in a watery mixture when eaten together with raw cherry belle radishes included in the dish. In contrast, another starter, the pig’s head fritter, was well-received. Presented as a golden croquette, it was complemented by pickled courgette ribbons and gooseberry ketchup, balancing richness with acidity.
Among main courses, a tomato salad served on fried bread with a dense vinaigrette stood out.
