Fresh farmer’s cheese is gaining renewed attention as a versatile and affordable dairy option, with its popularity rising alongside that of cottage cheese, which has seen a resurgence influenced by social media trends emphasizing high-protein foods.
Farmer’s cheese encompasses a variety of fresh, unaged cheeses that range in texture from soft and spoonable, similar to ricotta, to firmer and sliceable forms such as paneer. The cheese is traditionally made by heating milk and adding an acid, such as vinegar, to induce curdling—a process that separates the milk into curds and whey. The curds are then collected and either left loose or pressed to varying degrees to achieve different textures. This method is commonly performed on farms and does not require elaborate equipment.
Unlike discarded spoiled milk, the curdling in cheesemaking is intentional and controlled. Minimal draining produces soft cheeses like ricotta, which tend to have smaller curds and a drier texture compared to cottage cheese and are preferred by some who find cottage cheese’s texture unappealing. Increasing the pressure on the curds results in a firmer cheese that can be cut into shapes or formed into logs and balls.
Despite farmer’s cheese often being difficult to locate pre-packaged in retail outlets, making it at home is straightforward and cost-efficient. For example, purchasing about four liters of homogenized 3.25% milk, priced at $6.69, can yield approximately 600 grams of cheese, whereas ricotta of comparable weight typically sells for $9.49 to $9.79 at major grocery chains. The byproduct whey, which contains proteins and nutrients, can be repurposed in cooking and baking applications, such as replacing water or milk in pancake batter, smoothies, or oatmeal.
The basic process involves heating milk until it glimmers with tiny bubbles but does not boil, then removing it from heat to stir in around two tablespoons of vinegar per liter of milk. After letting the mixture sit for about 20 minutes, the curds separate and are strained through cheesecloth. If milk remains uncurdled, additional acid and gentle reheating may be necessary. The drained curds can be salted, optionally pressed under weight, and refrigerated to firm up.
Farmer’s cheese can be consumed similarly to cottage cheese, incorporated into dishes like lasagna, or served with a variety of toppings such as honey and chili oil. Its adaptability in recipes and ease of preparation contribute to its growing appeal among consumers seeking nutritious and economical dairy products.
