Nestled on a two-hectare homestead overlooking Mobile’s harbour in Newfoundland, Fork Restaurant has evolved from its humble beginnings as a pop-up in a coffee shop to a sought-after dining destination. Chef-owners Kyle Puddester and Kayla O’Brien have cultivated a culinary experience that blends local tradition with fine-dining techniques, drawing visitors from both nearby St. John’s and beyond.
Established nearly a decade ago, Fork initially operated in a modest setting where the couple sourced saltwater from Witless Bay to produce their own salt. Today, the restaurant’s seasonal operation attracts early bookings from locals eager to secure a spot in its intimate dining room, which offers scenic ocean views and a cozy atmosphere favored by tourists seeking a taste of rural Newfoundland charm.
Puddester’s menu emphasizes local ingredients, many of which are grown on the restaurant’s grounds or foraged from the surrounding environment. Dishes reinterpret regional staples through international culinary techniques. For example, cod tongues are given a crisp tempura batter, while agnolotti is filled with charred carrot and paired with fiddleheads. A creative variation on chips and dip incorporates wild leeks gathered from nearby areas.
Cod remains central to the menu, reflecting Newfoundland’s culinary heritage. It is served in various forms, such as traditional preparations with potatoes, as pierogi accompanied by cabbage and dill, or reimagined through Italian influences with gnocchi, puttanesca, and anchovy breadcrumbs.
Desserts, crafted by O’Brien, showcase French pastry expertise infused with local inspiration. The offerings include rhubarb jelly trifle, touton ice cream sandwiches, a cream cheese panna cotta styled as a cinnamon bun with salted caramel, and spiced cinnamon sugar fritters.
Continuing their commitment to sustainability and local sourcing, Fork recently brought on gardener Kyle Griffin to develop a regenerative farm on the property. The initiative aims to cultivate an array of vegetables, herbs, berries, and edible flowers, further anchoring the restaurant’s connection to its environment.
Despite its location about 40 minutes from St. John’s, Fork has established itself as a culinary destination that balances respect for Newfoundland’s food culture with innovative, refined cooking, drawing a diverse clientele eager to experience its unique offerings.
