Concerns about the nutritional quality of ultra-processed ice-cream products have been highlighted by experts who caution against claims of health benefits on packaging. These experts emphasize that many popular ice-creams contain additives and artificial ingredients designed to enhance shelf life and texture but offer little in terms of genuine nutritional value.
Professor Chris van Tulleken, author of the 2023 book *Ultra-Processed People*, defines ultra-processed foods as those containing ingredients not typically found in a kitchen cupboard. He explained that diets high in such foods are linked to an increased risk of obesity, diabetes, heart disease, cancer, and other health issues. Van Tulleken noted that since the 1950s, ice-cream manufacturers have increasingly incorporated chemical additives to prevent the product from deteriorating during long-distance transport and extended storage. These additives often replace traditional ingredients like egg yolk and cream with substances such as glycerine and sodium alginate, which replicate certain food properties but are not natural food components.
Van Tulleken expressed skepticism about marketing that promotes ice-cream as a healthier option due to added vitamins, proteins, or fiber. He cited research indicating that incorporating vitamins into ice-cream does not confer health benefits unless supplements are medically prescribed. According to him, such fortifications primarily serve to present unhealthy products as nutritious alternatives.
Barry Smith, a food scientist and sensory expert at the University of London, echoed these concerns. Drawing on his experience in the fast food industry, Smith explained that “diet” or “low sugar” ice-cream products frequently substitute sugar with artificial sweeteners. These sweeteners often require additional chemicals to mask their bitter aftertaste and improve texture, leading to complex formulations with multiple additives. Smith pointed out that artificial sweeteners can disrupt metabolic responses by increasing insulin levels without delivering sugar, potentially promoting weight gain.
Smith also highlighted specific additives found in some lower-calorie ice-cream products, such as guar gum, locust bean gum, and maltodextrin. He warned that these substances may negatively affect gut health and impair consumers’ ability to recognize fullness, encouraging overconsumption.
When contacted, Magnum representatives acknowledged the evolving nature of nutrition science and consumer expectations but did not directly address the criticism of their ingredients.
Additionally, Van Tulleken discussed how food manufacturers are adapting to emerging weight management treatments, such as GLP-1 medications, which reduce cravings for sugary and salty foods. He described a trend of “hyper-processing,” where companies increase the use of additives and processing techniques to maintain appeal among consumers attempting healthier diets or using appetite-suppressing drugs. Nestlé has reportedly launched a line of frozen meals aimed at people using GLP-1s, with ice-cream products also being marketed toward this demographic.
The observations from both experts point to a growing tension between food industry innovation and public health concerns regarding the impacts of ultra-processed foods on diet and wellbeing.
