John Vincent, the founder of the healthy fast-food chain Leon, has been credited with transforming office lunches since establishing the brand in 2004. His concept moved away from conventional sandwiches and unhealthy takeout options, introducing meals rich in protein and vegetables, often served in environmentally conscious packaging. Central to this shift is the popular “superfood salad,” a nutritious dish designed to offer both flavor and health benefits.

One of Vincent’s latest adaptations is a high-protein chicken superfood salad, delivering 27 grams of protein per serving. The recipe incorporates ingredients such as cooked quinoa, mixed salad leaves, garden peas, avocado, and a selection of fresh herbs including parsley, mint, and dill. Protein comes primarily from sliced cooked chicken thighs, though chicken breast can be substituted based on preference. The salad is complemented by aïoli—a creamy garlic sauce made from egg, garlic, sunflower oil, Greek yogurt, and lemon juice—and pickled red onions, which add brightness and acidity. Mixed seeds and lemon wedges are used for garnish and texture.

Vincent also highlights a roasted aubergine and cauliflower salad that features British summer vegetables as its base. The dish involves roasting cauliflower florets and aubergine chunks until golden and tender, then layering them with a tahini dressing. The dressing combines tahini paste, lemon juice and zest, garlic, and water to achieve a creamy consistency. The salad is finished with crispy fried onions, toasted flaked almonds, raisins, parsley, pomegranate seeds, and a drizzle of pomegranate molasses, creating a balance of nutty, sweet, and tangy flavors.

Reflecting on the origins of the superfood salad concept, Vincent acknowledged that when Leon first introduced the dish, the term “superfood salad” was not commonly used. The inaugural version created in 2004 prioritized a combination of taste and nutrition, featuring quinoa, broccoli, peas, cucumber, feta cheese, seeds, avocado, and fresh herbs. The salad is dressed simply with lemon juice and extra virgin olive oil to preserve the freshness and allow the ingredients to shine.

These recipes reinforce Vincent’s ongoing commitment to providing healthy, flavorful alternatives to traditional office meals, emphasizing whole foods, balanced nutrition, and fresh ingredients. The popularity of the superfood salad and its variations underscores growing consumer demand for convenient yet health-conscious lunch options in the workplace.
