Josef Centeno’s restaurant in Los Angeles’ Arts District has quietly established itself as a destination for fine dining through its unique blend of Italian and Japanese culinary traditions. Operating for 13 years, the venue offers a five-course tasting menu that evolves regularly, showcasing an innovative fusion approach.

Diners at the restaurant might begin with dishes such as chawanmushi, a traditional Japanese steamed egg custard, enhanced with summer cypress seeds, smoked trout caviar, and baby Japanese sardines. Another standout offering includes squid ink pappardelle served in a lobster cream sauce infused with the sweetness of Momotaro tomatoes, reflecting the chef’s emphasis on both flavor complexity and refined technique.

A signature and constant item on the menu is the satsuki rice seafood porridge, offered as an additional course. This dish combines the richness of a luxurious seafood tower with the texture and creaminess of risotto under a Parmesan emulsion. It is adorned with high-quality ingredients such as geoduck, sturgeon roe, Hokkaido sea urchin (uni), scallops, prawns, and flakes of skipjack tuna. The dish is designed to balance various marine flavors, each ingredient complementing one another to highlight the natural sweetness of the seafood.

To enhance the dining experience, sommelier Romain Racary curates beverage pairings that include a tokubetsu junmai sake, a lively Gamay wine, or a special bottle of Barolo, aiming to complement the diverse flavors emerging from the kitchen.

Centeno’s fusion menu demonstrates a thoughtful dialogue between disparate culinary traditions, making the restaurant a noteworthy option for patrons seeking inventive and refined dining in Los Angeles.
