Renowned French chef Charles Coulombeau showcased a distinctive fusion of French and Japanese culinary traditions during a recent five-course dinner event at Sabayon, the rooftop restaurant of EQ Kuala Lumpur. Known for his Michelin-starred establishments La Maison dans le Parc in Nancy and Yozora in Metz, Coulombeau’s menu combined classical French techniques with Japanese influences, enriched by contemporary global flavors.
The dinner, set against the backdrop of Kuala Lumpur's skyline, began with a selection of canapés symbolizing milestones in Coulombeau’s career. A dish featuring green peas, mushrooms, and star-shaped nori represented his early training, experience in Burgundy, and time in Japan respectively. Coulombeau explained that peeling peas during his apprenticeship emphasized attention to detail, while mushrooms and nori referenced key phases that shaped his culinary style. This trio was complemented by wine jelly and croutons, creating layered textures designed to engage the palate.
Subsequent courses maintained the blend of French precision and Japanese simplicity. A slice of cured Hamachi was served with pickled cucumber, coriander, and paired with Izumibashi Junmai Ginjo Megumi sake from Kanagawa. One appetizer highlighted tamagoyaki filled with finely chopped leeks, topped with caviar and yuzu, served alongside Domaine Vacheron Sancerre Blanc 2018, a wine noted for its crisp and mineral characteristics.
The scallop course stood out with the shellfish marinated in shoyu, caramelized with a torch, and presented on a carrot and marigold sauce. Enhanced by a deep-fried, sugar-cooked Sichuan peppercorn infusion tailored to suit Malaysian tastes, the dish was paired with Chateau Miraval Cotes de Provence Rosé 2021, offering raspberry and nectarine notes.
For the main course, diners chose between duck and wagyu beef, both served with accompaniments including sushi rice, beef cheek, blackberries, parsnip purée, and meat jus. The wagyu was seared to emphasize its rich marbling, while the beef cheek was slow-cooked with vegetables and red wine to develop complexity. The accompanying Saintes Pierres de Nalys Chateauneuf-du-Pape Rouge 2017, with its fine-grained tannins, complemented the richness of the meats.
The meal concluded with a dessert featuring orange blossom, passion fruit, and jalapeno, adorned with a flower-shaped honey-and-sugar tuile. The light, whipped egg white base was balanced by the crisp tuile’s texture. This was served with Oremus Tokaji Aszu 3 Puttonyos, a Hungarian dessert wine noted for apricot and pineapple flavors.
Guests were offered bergamot candy and nougat to close the evening. During his residence, Coulombeau also partnered with Malaysia Airlines to provide exclusive dining privileges for passengers. Sabayon operates six nights a week in Kuala Lumpur’s Equatorial Plaza.
