Peach Blossoms, the Chinese restaurant located at Parkroyal Collection Marina Bay, has unveiled a revamped menu alongside refreshed interior spaces, aiming to distinguish itself amid a competitive dining landscape. The revamp, launched on October 15, highlights the culinary expertise of executive Chinese chef Edward Chong, a Malaysia-born Hakka chef who has been based in Singapore for two decades.

The revamped menu builds on Chong’s deep familiarity with Singaporean and Southeast Asian flavors, while also incorporating elements that reflect his Malaysian Hakka heritage. Several signature dishes remain on the menu, such as the smoked duck (from $48), sweet and sour Kurobuta pork ($38), and the Hakka salted chicken paired with kampachi and a julienned salad ($108). Notably, the Hakka salted chicken, traditionally a seasonal offering tied to the lohei celebration, is now available year-round.

Among the new additions is a starter that merges familiar Singaporean tastes with Chong’s inspirations from Guangdong’s Shunde region. The Chicken Rice Tart with Six-Hour Cured Kampachi and Caviar is part of a four-combination platter priced at $48. The dish features a tart shell filled with chicken fat-infused rice, complemented by fried shredded ginger, kampachi, and Kaluga Queen caviar.

Chong’s signature Crisp Air Roll ($88 per person) receives an update with ingredients including Spanish mackerel, crab meat, konjac jelly, hairy gourd, and dried shrimp, all simmered in a seafood broth. The dish offers diners a refined blend reminiscent of popiah and otah.

Another highlight draws from traditional preserved radish, or chye poh, incorporated innovatively into a braised Boston lobster dish priced at $268 for four. The lobster is dry-braised in a claypot with basil and a sauce made from Japanese shiitake mushrooms, accompanied by chye poh and chwee kueh, delivering a balance of textures and flavors.

For diners seeking a luxurious option, the menu features a Bak Kut Teh-inspired rendition of Buddha Jumps Over The Wall, priced at $98 per person. This elevated take on the peppery pork soup includes premium seafood ingredients such as jiu jiu abalone, Kantoo sea cucumber, South African fish maw, and giant king grouper stomach.
