Despite the premium pricing, questions remain about the true costs behind production. Rob and Iona Gore, owners of the award-winning Brickell’s ice cream, offered insight into the economics of crafting high-quality ice cream. Their product, sold for £4 per scoop during their summer pop-up in Bath and over £7 for pints at Whole Foods Market, is made without artificial stabilizers or emulsifiers. Instead, it uses high-grade ingredients sourced from their family farm and local producers, including fresh milk, Gloucestershire double cream, and free-range eggs.
Rob Gore explained that essential ingredients such as cream and egg yolks significantly contribute to cost, with yolks being particularly expensive per gram. Larger commercial manufacturers often reduce these costs by eliminating yolks and cream, substituting them with cheaper artificial stabilizers and emulsifiers. These additives not only mimic creaminess but also extend shelf life, supporting mass production profitability.
Another factor influencing cost and quality is air content, known as “overrun,” which is incorporated into ice cream during production to increase volume. Brickell’s maintains a low overrun of 20 to 25 percent, whereas some commercial producers may add up to 100 percent air, effectively doubling the finished product’s volume with minimal actual dairy content. This difference affects the creaminess and melting properties of the ice cream. According to Rob Gore, airier ice cream melts faster and lacks chew, which can mislead customers about its true quality.
From a business perspective, ice-cream sellers rely heavily on volume and cost control. While Brickell’s finds better profit margins in its scoop sales, with a 90 percent margin before overheads compared to 40 percent on pints sold wholesale, their approach remains premium and ingredient-driven.
